We can all agree that brunch is a pretty exciting concept. What's better than hanging out with members of the squad, drinking, laughing and eating? Not much! It's even more exciting when it's a team effort and the location isn't a busy restaurant, but rather the backyard of a friend. Here are some quick and simple items you should make for your next brunch:

Crepes

I'm a huge fan of crepes. They're light and fluffy, yet sweet and savory. Whichever flavor you're seeking, they can deliver. But nothing screams brunch like crepes with nutella, strawberries, home-whipped heavy cream and a homemade blackberry sauce. This recipe makes about 15-20 crepes.

Ingredients

6 eggs

2 tablespoons sugar

1 teaspoon salt

4 cups milk

1/2 teaspoon vanilla

1/4 cup of oil (or melted butter)

2 cups flour

Toppings

Nutella

sliced strawberries

whipped cream

blackberry sauce (recipe below)

How to make the blackberry sauce:

2 cups blackberries

1/4 sugar

1 cup water

1/2 cup pinot grigio.

Bring all ingredients to boil over medium heat. Once boiling, reduce heat to low and simmer for 45 minutes.

Directions:

You can make this batter using a mixer, but I love the ease of tossing everything into the blender. Add everything except the milk to the blender and blend until fully combined. Once all ingredients are blended together, slowly incorporate milk. The consistency should be thin with tons of bubbles. The batter is now ready to go, but if you let it sit for as little as an hour in the fridge, you get a chewier type of crepe, which is equally as delicious. Heat a medium saucepan (or crepe pan if you have it) over medium-low heat. Add butter and melt it to coat the pan. Add the batter slowly and rotate the pan to coat the bottom. Cook for about 50-60 seconds on each side. Serve with desired toppings.

Ingredients

2 eggs

1/4 cup of red onions, minced

Diced zucchini

Diced yellow squash

1 garlic clove, minced

Cotija Mexican cheese

Directions:

Saute veggies and garlic in oil in a small pan. Place in a small bowl and set aside. Reduce heat to medium-low. Whisk together eggs with salt, pepper and cottage cheese. Pour egg mixture into a small pan and let it cook for 15 seconds. Add some of the veggies and then continue cooking. Once the top of the egg begins to cook, fold and continue cooking for another 60-90 seconds. Remove from heat and devour immediately.

Time for the booze.

When it comes to the alcohol, I prefer it easy to assemble. Enter the screwdriver. The ingredients and directions are simple — orange juice and vodka mixed together. Pour it over ice and you've got yourself the perfect addition to one solid meal. Toss in a few games and some music and your brunch is bound to be bomb!
