Looking to cook something at home tonight? It’ll likely be cheaper and healthier for you. So, if you are in search of a healthy dinner option this week, look no further than this lemon-garlic roasted chicken and potatoes recipe from The Cafe Sucre Farine.

The ingredients for the chicken, according to the recipe are:

– Six medium bone-in skin-on chicken breast halves

– One tablespoon chopped fresh rosemary

– One tablespoon chopped fresh thyme

– Three cloves garlic finely minced

– 2 ½ teaspoons kosher salt

– ½ teaspoon freshly ground black pepper

– Finely grated zest of 1 medium-size lemon

– One tablespoon fresh lemon juice

– Two tablespoons extra virgin olive oil

Ingredients for the potatoes:

– 1 ½ pound small yellow potatoes halved (or quartered if they are large)

– Two tablespoons extra virgin olive oil

– One teaspoon kosher salt

– ½ teaspoon freshly ground black pepper

– One lemon sliced in 1/8-inch slices

Directions

Marinate the chicken early

In the A.M. combine the rosemary, thyme, garlic, salt, pepper, lemon zest, lemon juice, and olive oil in a small bowl. Rinse breasts and pat dry. Press the herb mixture into the chicken and then transport to a sheet pan. Cover with plastic wrap and refrigerate for a few hours.

Preheat Oven

Preheat the oven to 450˚F. Lightly grease a pan with your choice of oil.

Marinate the potatoes

Toss potatoes, olive oil, salt, and pepper in a medium-size bowl and coat sufficiently.

Place the potatoes in the oven and roast for 15 minutes.

Add the chicken breasts to the pan with the potatoes. Add lemons around chicken and potatoes and drizzle some juice on top if you like. Roast for 30-45 minutes longer, or until the breasts reach 160˚F. 

Remove from oven

Once removed from the oven, cover the chicken and potatoes loosely with foil. Let your food rest for 5 to 10 min before eating. Feel free to add some roasted veggies as another side as well!
